Definition

Average ticket size, sometimes called average check, is total revenue divided by number of checks (or covers, depending on how you cut it) over a period. A restaurant with $80,000 monthly revenue and 2,500 checks has an average ticket of $32.

Ticket size is the easiest top-line lever to move. Raising it by $2 — through smarter menu design, better suggestive selling, or a small price test — flows almost entirely into contribution margin since variable cost per check rises only modestly. A $2 lift on 50,000 annual checks is $100,000 of additional revenue at near-full margin.

The drivers of ticket size are: menu design (placement of high-margin items, anchor pricing), upsell habits (server prompting on apps, sides, drinks), promotional structure (bundles vs à la carte), and beverage attach rate (often the single biggest lever — wine, cocktails, dessert).

Tracking ticket size by day-part is the more useful cut. Lunch ticket and dinner ticket move on different drivers; tracking them separately lets you see, for example, that lunch ticket is shrinking because takeout is cannibalizing dine-in.

Why it matters for restaurants

Average ticket is the metric most restaurants underuse. Operators obsess over cover count (which is hard to move quickly) when ticket size is right there to optimize. Three months of focused work on menu design, beverage attach, and server suggestive-sell can lift ticket 10-15% — bigger than most acquisition campaigns.
